What is meant by modernization of kitchen practices?

The tech boom has been felt around the world, throughout all industries. I mean, I am writing this blog on a mobile phone, from a website I built on that same phone… wild!! Now, all that has been born from that boom hasn’t been as helpful and effective as we’d hoped. Some things are just better done the good old fashioned way. I admittedly still like to jot things down on paper with a #2 pencil, such as the Mise journal by Philip Speer but I am a big fan of tech automation.
That being said, molecular gastronomy was fun for a while too, I mean some techniques such as Sous vide, stabilizers and liquid nitrogen freezing are useful but many of those other techniques were just here for a quick WOW and were gone just as fast.
I’ve personally been working in kitchens for over 20 years and have witnessed firsthand the evolution of our industry and appreciate what I’m seeing. Nothing has been as needed, in my opinion, as tech to streamline temperature monitoring, labeling and recipe cataloging. In this emerging market there are bad, good and great products and I spent most of 2021 trying them all. Many of these services cost more than they are worth but some hit the mark! I mean, to run a kitchen takes a lot of work and checks & balances, without them I guarantee you something is wrong, even if just behind the scenes, for now.
